PROTEIN PACKED BANANA MUFFINS

Ingredients:

1 cup mashed banana (about 3 very ripe)

2 eggs

¼ cup coconut oil, melted

1/3 cup almond butter

2 TBSP maple syrup or honey

1 tsp vanilla extract

1 cup almond flour

¾ tsp baking soda

¾ tsp baking powder

¾ tsp cinnamon

¼ tsp kosher salt

½ cup dark chocolate chips (optional)

Preheat oven to 350 degrees and line a muffin tin. In a large bowl or mixer, combine bananas, eggs, coconut oil, almond butter, maple syrup, and vanilla until fully combined.

Add all dry ingredients and mix well.  Fold in chocolate chips, if using. 

Portion into muffin liners (about 2/3 full) and bake on the center rack 19-20 minutes or until muffins have risen and a toothpick inserted comes out clean.
